Apple Crisp

10 cups all-purpose apples, peeled, cored and sliced (I used about 6 Granny Smith apples)
3/4 cup white sugar
1 tablespoon all-purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon nutmeg

2 cups quick-cooking oats
2 cups all-purpose flour
2 cups packed brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup butter, melted

Directions
1.Preheat oven to 350 degrees.
2.Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour, nutmeg, and ground cinnamon together, and sprinkle over apples.
3.Combine the oats, 2 cups flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
4.Bake at 350 degrees for about 45 minutes.
5. Serve with vanilla ice cream.

Hot Apple Pie Dip

1 Tub(8oz.) Cream Cheese
2 Tbsp. Brown Sugar
1/2 tsp. pumpkin pie spice
1 apple chopped and divided
1/4 cup shredded cheddar cheese
1 Tbsp. pecans chopped (optional)

Heat oven to 375 degrees
Mix cream cheese, sugar, and spice in medium bowl until well blended. Stir in half of the apples.
Spread into pie platter or small casserole dish. Top with remaining apples, cheddar and nuts.
Bake 10-12 minutes and serve with Ritz crackers or Wheat Thins.

Pumpkin Apple Streusal Muffins

Ingredients:
2c flour
2c sugar
1T pumpkin pie spice
1 t baking soda
1/2 t salt
2 eggs, slightly beaten
1 c canned pumpkin puree
1/2 c vegetable oil
2 c peeled, ored, chopped apples

Topping:
2T flour
1/4 c sugar
1/2 t cinnamon
4T butter

Directions:
Preheat oven to 350. In large bowl, sift flour, sugar, pumpkin pie spice, baking soda, and salt. In separate bowl, mix eggs, pumpkin puree, and oil. Add pumpkin mixture to flour mixture, stirring just to moisten. Fold in apples. Spoon batter into muffin liners. In small bowl, mix together topping ingredients except butter. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping evenly over muffin batter. Bake 22 min or until toothpick comes out clean.

Cream Cheese Chocolate Chip Cookies

Ingredients:
· 1 package (3 ounces) cream cheese , room temperature
· 16 Tbsp. (2 sticks) unsalted butter , room temperature
· 1 cup sugar
· 2 large eggs
· 2 tsp. vanilla extract
· 2 cups all-purpose flour
· 1 tsp. salt
· 1 package (12 ounces) semisweet chocolate chips
· 2 tsp. grated orange zest

Preheat oven to 350°. In the large bowl of an electric mixer, beat cream cheese, butter, and sugar on high speed until well blended. Beat in eggs and vanilla until smooth. Reduce speed to low; beat in flour and salt until just combined. Stir in chocolate chips and orange zest.Drop dough by teaspoonfuls onto ungreased baking sheets; space dough about 1 inch apart. Bake 10 to 12 minutes, or until cookies are lightly browned around the edges. With a spatula, transfer to racks to cool completely; store in an airtight container for up to 1 week.

Cooked Cinnamon Apples

Ingredients:
2 tbsps water
1 tbsp butter
1 tsp ground cinnamon
1/2 c firmly packed light brown sugar
4 McIntosh apples, peeled & sliced (about 2 lb.)

1/4 tsp ground nutmeg (optional)

Directions:
1. Put cinnamon, brown sugar, nutmeg, and apples in a large ziplock bag. Shake until apples are coated.
2. Melt butter in a saucepan then add 2tbps water.
3. Add apple mix to sauce pan and stir occansionaly until apples are cooked. About 8-10 min.

Chocolate Upside Down Pudding

Pudding
1 square unsweetened chocolate
2 tbsp. butter
1 cup flour
2 tsp. baking powder
3/4 cup sugar
1/4 tsp. salt
1/2 cup milk
1 tsp. vanilla

Topping
3/4 cup sugar
1/4 cup brown sugar
2 tbsp. cocoa
1 cup cold water
Preheat oven 350

Melt chocolate and butter in microwave

In seperate bowl whisk flour, baking powder, sugar and salt. Stir in milk gradually, then vanilla and chocolate/butter mixture.

Turn into prepared 8x8 pan. Blend 2 sugars and cocoa and sift evenly over batter. Pour cold water evenly over top of all.

Bake 40-50 minutes

Santa Fe Chicken

5-6 chicken breasts
1 can black beans, rinsed and drained
2 cans corn
1 c. (or more) salsa

Cook in crock pot for sevral hours until chicken is done. Remove chicken and cut up (or just shread). Add 8 oz. Cream cheese (cut up) to crock pot mixture. Return the chicken to the crock pot and heat until cream cheese melts. Serve over rice.
